Lucky Vanilla Cupcakes...By who else?! Sprinkle Bakes!

Stacey from I wish I was Martha, got together for some kid-free quality baking time. 
And squealing over edible glitter time.
We  decided to make these Lucky Vanilla Cupcakes from the fabulously talented Sprinkle Bakes!
Don't judge me for squealing until you see the pictures.

Strudel.

We were at Costco the other night and Ben wanted a box of strudels.

I was like, " ppssshhhh! I can totally make that!"

So no strudel for Ben.

I had a box of puff pastry left over from a previous project, a can of wild berry pie filling, and some cream cheese, you know that weird amount left over from doing a cheesecake or something? The tub of cream cheese is more than an 8 ounce brick, but not enough for another recipe! Make me crazy!

Anywhooo, I spread out my puff pastry on a Silpat lined cookie sheet, parchment paper works great too, and you don't have to wash it, bonus! (we're not exactly tree-huggers here)

I then spread out the remainder of the cream cheese into the middle section of the pastry.
Spoon about 1/2 of the can of pie filling on top of the cream cheese.
I sliced the edges and braided the sides of the pastry sheet into the middle. 
Brush with an egg wash and sprinkle with sugar.

Bake at 450 until puffy and golden brown. Around 30 minutes.

Set aside and let cool.

While I was trying a bite letting it cool down, I found a recipe for an easy Creme Anglaise sauce.

I was thinking of ways that this could be Irish and fit in with my St.Patty's day theme, but strudel is German. Buuuuuut it's filled with field berries, and Ireland has fields so there must be berries there, therefore this is an Irish Fieldberry Strudel. 



Creme Anglaise topping. 


I dare you to challenge me on this.
But don't.
I don't like confrontation.

Sugary Shenanigans.

OK you lucky people that get TWO blog post in a row! I really do spoil you don't I? I'm not exactly doing a St. Patrick's Day countdown or anything, I'm just really jazzed when a new holiday/event/theme comes around. So the posts will eventually taper out.

So here are my Chocolate Fudge Cupcakes with Irish Cream Buttercream Frosting. 
(They're really good. I'm telling you,  you need to make these!)

What you need to make these wee cakes:

1 box of chocolate fudge cake mix, yes, yes I used a mix!

These are dangerous. AND they come in peanut butter.
1/2 package of Presidents Choice Mini-Fudge bites, You can snack on the other half :)

1 cup of butter

1 bag of icing sugar

1/4 - 1/2 cup of Irish cream coffee creamer, or for adults only, you could use Bailey's.

Make your cake mix and fill your cupcake liners or if you like washing pans, fill your cupcake pans.

Put approximately 1 tablespoon of fudge bites in every cupcake.

Bake as box directs. When done, cool completely.

For the Frosting:

Whip up butter in mixer, when fluffy mix in icing sugar, 1 cup at a time.

Add Irish cream coffee creamer a tablespoon at a time, until mixture is fluffy.


Pipe onto cooled cupcakes.


Aren't they cute?!






To be honest, there weren't really any shenanigans while I was baking these cupcakes, I just really wanted to use that word. A) it sounded Irish and B) it's just really fun to say a bunch of times. Shenanigans!
